Best bean salsa dip ever!

Seriously I'm not exaggerating here...best. dip. ever.
It is the best. (said with Jack Black accent in Nacho Lebre.)
You will need:
1 can of corn
1 can of black beans
1 can of kidney beans
1 can of black eye peas (or I've used white beans and it tastes the same)
2 or 3 tomatoes diced
3 avocados diced (you may want to do more, people usually tend to snarf up the avocado)
1 bottle of KRAFT Italian dressing. You must use Kraft or it doesn't taste as good. For sure don't use Wishbone. Just use Kraft. Kraft for life. Kraft or bust. Ok I think I've made my point. Only put about half the bottle in first and then eyeball how much dressing you want in it. Careful not to put too much or it will become soupy and no one wants to eat bean salsa dip soup.

Put the corn and all the beans in a strainer and rinse with cold water. Once the water is drained put it in a bowl and mix in Kraft Italian dressing and put in the fridge for about an hour then when you are ready to eat it add the tomatoes and the avocados. This is the best way but if you are in a hurry you don't need to refrigerate it. Behold the dip!

Well my Lukie baby is a one year old! I can't believe how fast that year went by. This is Luke when he was just a few hours old. Yeah...freaking cute.

It's crazy how much they change in just one year. Here is one of Luke's pictures from his 1 year shoot. We did Luke and all of his cousins but I'll do a separate post for those soon.

We had Luke's party on Saturday and it was so fun! It was a cookies and milk party. Here are a few/million highlights.

Summer and a Dutch BBQ

Well summer is in full swing and us DeHaas folk are loving it. Landon's sister is in town visiting from the great state of Texas and we've been partying it up with them. Linc loves it when his cousins come to play. Here's a few of our summer so far.

Landon is going to LOOOOOOOOOOOOOOVE me for posting this one but come on....just look at it. If you haven't tried keeping your face muscles loose and jumping on the tramp at the same time then you haven't lived. You must try this.

You know it's been a long fun day when you fall asleep like this. :)

Last week the DeHaas side of the family had a reunion and we got to meet some family from Holland. We didn't enjoy any Dutch cuisine but there were Dutch people there with cool accents so we get to call it a Dutch BBQ, sounds much cooler I think.

Cancun

I'm back! Man it's crazy how fast a month can fly by. I spent a week of that month in sunny Cancun which was freaking awesome! A much needed break for the Landino and I. We got to relax, SLEEP ALL THE WAY THROUGH THE NIGHT, eat twice my body weight in chips and salsa, see ancient ruins, go snorkeling, order banana monkeys by the pool, bargain with the amigos, Landon got to brush up on his Spanish skills and my legs no longer blind people with their whiteness, yes! My goal was to come back as tan as the amigos and I got pretty close. Anyway it was great! Here are a few highlights of our trip. We'll start out at our lovely hotel.

My sister and her husband came for a few days which was so fun! Michele and I decided to get up early one morning to do some sea shell hunting and watch the sunrise. Our seats for the sunrise.

Rainy days and Mondays always get meeeee downnn. That song has been in my head...ALL. DAY. Although it was rainy and a Monday I was not down. I love spring rain. It makes everything look so green and glorious. I shoved my camera in a plastic bag and headed out in the rain and took pictures around my yard. There are about a million images...sorry I got carried away.

Do you see the question mark in the rain drop?? Crazy! I did not photoshop that in. One, that would be weird of me to photoshop a question mark into a raindrop and two that would be weird of me to photoshop a question mark into a raindrop.

These last two were not taken in my yard. They were taken in the blessed Cafe Rio parking lot as I was waiting for my sister to bring me my delicious grilled chicken salad. YUM!

Today I am missing summer. I want it to be warm outside so that I can open my back door and all my windows and let a warm summer breeze run through my house. I want to drink lemonade, put my feet in the grass and maybe do a little gardening in the buff...

To have texture or not to have texture? That is the question.

Nummy yummy delicious pizza!

Are you ready to get your pizza making skills on? Good. You won't regret it because this stuff is heavenly. Today's menu will included BBQ chicken spinach tomato pizza (BCST) and ham and pineapple pizza (H&P).

THINGS YOU WILL NEED:
Pizza crust- I use Boboli pizza crust, that's the best one I've tried. Some proactive people may choose to make their own.

BBQ Sauce- I use sweet baby rays.

spinach-the green kind
tomatoes- the red ripe kind. Home grown are the BEST but if it's not August or September your stuck with store bought. Diced.
chicken-breasts
mozzarella cheese- Big bag. shredded.
garlic powder-powdery kind
pineapple- big chunks.
ham-cut fresh at the deli.
pizza sauce-any kind your heart desires cause I can't remember the name of the one I use.

Ok first thing to do is boil the chicken until fully cooked, unless you like salmonella then partial is ok.
Once cooked, shred and mix in BBQ sauce and garlic powder. Just eyeball the garlic powder.
Let that sit for at least an hour in some place cold, most people will use refrigerators.
After the hour and your stomach is telling you it's time to eat start cooking your spinach. I boil mine and then drain the water.
While that's cooking pull out your Boboli pizza crusts. On one you are going to lather on the BBQ sauce on the other you are going to smother pizza sauce on. Now I like a lot of cheese on mine so I do a very thin layer of the mozz cheese on both.
Oh yes I almost forgot. Turn your oven on to 350 so it can heat up while you do the rest.
Then on the BCST I will spread the chicken, cooked spinach, tomatoes and a few dashes of garlic powder then the final layer of cheese on the top. This picture doesn't have the other layer of cheese so just pretend you see it.

Now for the H&P. Lay out a layer of our deli ham and then pile on the pineapple and a layer of cheese.

Now it's time for baking action. Place them in the oven and in a few minutes you'll notice a heavenly aroma filling your kitchen.

After about 10 minutes they are ready for the devouring. THE FINAL PRODUCT

A new leaf

I'm about to jump on a soap box so if you'd like to skip it jump down to "NUTSHELL VERSION. So I woke up this morning at 5:30 am. This might not be early for some of you but I regularly like to get out of bed 7:30-8ish (tough life I know). I tried and tried to fall back asleep. Fail. My brain would just not shut off. I was thinking about my photography business and about blogging. Here's the ugly truth folks. I've kind of been a pansy about my photography business and MY BLOG POSTS ARE BORING. There I said it. First I need to clarify that the people in my blog posts are NOT boring. They are the cutest most fabulous people on earth, thank goodness or I would not get any traffic on here. But for some reason I have the hardest time coming up with anything clever so I end up writing about the weather conditions of the photoshoot. LAAAAAME. So now that I've clarified that lets get back to me being a pansy cause I'm sure you want to hear all about it. Lately I've been contemplating whether or not I should continue to pursue the photography biz. It seems like having your own photography business is kind of a fad right now and I just felt like another person jumping on the band wagon. Then I had a light bulb moment this morning. I am afraid. I'm afraid and I am just making up excuses not to go for it. I'm afraid I'm not good enough to jump on the band wagon. I'm afraid of what others will think. I'm afraid I wont be as good as other photographers. I'm afraid that if I try, I will fail. And then another light bulb, a brighter one...quite being such a big baby! DING! Everyone one feels this way at one time or another and you can either let it control you, OR you can not be a pansy and just do it. You only have one life to live. ONE. So just do it. JUST DO IT! That was my internal motivational conversation I had going on with my self this morning. I could not lay in bed any longer. I had to get this out or I felt like I was going to burst. So here it is...MY GOAL: turning my business and my blog from lame...ness to greatness. Wow...remarkable. I might have to work on that but you get the idea. Ok I'll be turning off my soap box now.
NUTSHELL VERSION: me. pansy. light bulb. desire to no longer be a pansy.
